ORIGINS

We don’t come from a long legacy or a family name. For us, it’s about having the guts to do something new. What started as home setups has grown into something bigger that allows us to support our community.

That drive to support our local community gives our craft purpose. It’s not only about contributing spirits; it’s also about contributing to those around us. Using local grains, providing local jobs, and operating with transparency is what matters to us.

PROCESS

While most distilleries buy their malts, we don’t. We’re intentional about overseeing the whole process, from grain to glass. We take pride in being self-sufficient and masters of the whole craft, not just a portion of it.

NEVER CHILL FILTERED.
ALWAYS SWEET MASHED.

We take the hard way and it pays off. We never chill filter, which means, we don’t filter out the “haze” or “cloudiness” because that’s the good stuff. We embrace it and lean into those qualities. We want the fruit, the heavy notes, and the wood characteristics that chill filtration will remove.
 

We always sweet mash, yielding a cleaner and more complex flavor from the fermentation, from the our grains, and from the still. This process creates a more balanced profile that gets carried into the bottle and, eventually, the drinker’s glass.
